Vinification: Whole bunch grapes slightly crushed into small open batch fermenters. Soft punch downs performed twice daily for extractions. Towards the end of the ferments, the must was basket pressed and wine racked into old 225 litre barrels to complete malolactic fermentation. The wine matured in barrel for 18 months before being blended. The blend underwent no finings and was bottled in October 2019.
Tasting notes: Initial dark, masculine nose of tobacco leaf, leather, saddle sweat, shitake mushroom and spice; opens up to reveal tantalising hints of herbs and pink fruit. The spicy richness on palate balances nicely with the surprising freshness of eucalyptus and red fruit showing through. Inky, full bodied palate with creamy, lingering tannins.
